Brehm Vineyards serves as a bridge from grape growing to winemaking for small wine producers. The expectation of a particular grape from a given vineyard is always influenced by the vintage and harvest conditions. Once harvested, the expectations are replaced by reality. Winemakers may design the best wine from these grapes because the chemistry and quality of the grapes are known. The known are the most predictable.
PLEASE READ EVERYTHING ON THIS PAGE BEFORE PLACING AN ORDER FOR THIS PRODUCT!
These musts and/or grapes are frozen in a 26-liter pail by Brehm Vineyards priot to shipping to us. These products are NOT wine kits! The brix, T.A. and pH amounts were determined prior to freezing and are extremely accurate; however, due to seperation that occurs during freezing, your readings may be different pre-fermentation. For this reason, it is strongly recomended that you make your initial adjustments based on the readings provided and make any additional adjustments post-fermentation based on your new readings.
The white wines are juice only and will make approximately 5 gallons. On the other hand, the red wines include the crushed grapes and only make around 3.25 gallons per pail. As such, you might want to consider 2 or 3 pails to make 6.5 of 10 gallonas of wine. For the reds, you will also need access to a grape press when the fermentation is complete. For local customers, I will have large fermenting buckets and grape presses available for rent.
