We always try to answer the phone when you call; however, sometimes, we are unable to answer the phone as we are all on the other lines or we have customers in the store. If you get the voice mail, please leave your name, number, brief message and a best time to call. We will return your call as soon as we can.

WINE OF THE MONTH

In keeping with the featured article this month, we are featuring some "fast drinking" wines. These wines do not require very long to age, at all. In fact, I have enjoyed all of these within 2 weeks of bottling. As with all wine, they will improve with age, but if you are impatient (as a lot of new wine makers are!), then one of these kits will quench your thirst.

When you have a question or just want to learn more about wine making, don't forget our forum! We have over 550 registered members, including some extremely knowledgeable wine makers with loads of valuable information and willing to assist you in your wine making needs. Responses to most posts are made within minutes. We are also known to have an occassional contest available to forum member only with valuable gifts, savings and coupons!

Whether you are an expert or a novice, it is an excellent place to ask questions, exchange ideas and meet other home wine makers. If you haven't logged into the forum, try it sometime. I think you will find it most informative and enjoyable, as well as, a great place to meet fellow wine makers.

FEATURED ARTICLE - SO YOU GOT A STARTER PACKAGE FOR CHRISTMAS!

For those of you that received a Wine Making Starter Package, we would like to welcome you to the wonderful world of home wine making and would like to offer some tips and suggestions to make your first batch fun, exciting and successful!

If you received one of our starter packages, you have all the necessary tools to make your first batch of wine a success. If you received our Basic package or a package from another store, you should consider adding the following pieces of equipment:

  • Drill Mounted Stirrer
  • Corker
  • Auto-siphon

The first suggestion I can make is to read the instructions that came with your wine kit and follow them! I can not stress this enough. The wine kit manufacturers have made thousands of batches of their wine and they do know what is best for their kits. Whenever you get a new wine kit, read the instructions that come with the kit. It is always best to read the instructions that come with a wine kit as the kit manufacturers occasionally change the instructions,

The second thing you should know is that most wine kits are SIX gallons, not 5 or 6.5, but exactly SIX gallons. As a result, you need a 7.9 gallon bucket and a 6-gallon carboy. If you have not started your wine kit, please verify the sizes of your bucket and carboy.

Next, let's talk about temperature. Winexpert states that the optimum fermentation temperature for their wine kits is 73 degrees with a range of 65-80 degrees. The yeast go to sleep when the temperature gets too cold and die when it gets to hot. Consequently, the best plan is for a constant temperature around the 73 degree mark. This is for the ENTIRE fermentation period both in the bucket and in the carboy before stabilizing and fining. Once you have stabilized, you can age your wine at lower temperatures. My advice is to find a place in the home away from sunlight and vibration for your "Wine Making Area".

For your first racking (from the bucket to the carboy) don't be too concerned with the sediment. The more juice you transfer at this racking, results in less topping off in future stages. The sediment will fall out later and is useful in clarifying your wine.

The next item of information concerns the number one issue with wine made from a wine kit, carbon dioxide (CO2). The yeasts convert the sugar to alcohol and CO2. You want the alcohol, but not the CO2, unless you are making a sparkling wine. If you let the carboy sit for several months, gravity will remove the CO2 from the wine, but you are in a hurry to bottle, right? To remove the CO2, you need to stir the wine "vigorously". This is where a drill mounted stirrer comes in handy. If you stir with a spoon, you will need to stir the wine 3 times for at least 2 minutes each. Trust me, this can be very tiring! With the drill mounted stirrer, you allow electricity to do the hard work. It should be noted that you can not over stir your wine at this point; therefore, when in doubt, stir some more!

The last piece of advice I can give to new wine makers is "have patience". A lot of the wines will taste good after only 3 months in the bottle, but if you allow them to age for 6 months to 1 year, you will be rewarded with some outstanding wines.

TOY OF THE MONTH

Whether you have been making wine for some time or just getting started, cleaning and sanitizing your wine bottles is a necessity. To make this part of your hobby easier, we have put some toys on sale that make this task simpler and quicker. The bottle washer is placed on your faucet using the adapter and allows you to shoot hot water right into the bottle.
